Simmer the Broth
In a large pot, combine the beef shank steak, water, onion, ginger, toasted spices, fish sauce, and salt. Bring to a boil, then reduce heat to low and let it simmer for 2-3 hours, skimming off any foam that rises to the surface.

Strain the Broth
Once the beef is tender, remove the shank steak from the pot. Strain the broth through a fine-mesh sieve to remove solids. Return the broth to the pot and keep warm.
Noodles and Serving

Prepare the Noodles
While the broth is simmering, cook the rice noodles according to package instructions. Drain and rinse with cold water to prevent sticking.

Slice the Beef
Once the beef shank steak has cooled slightly, slice it thinly against the grain.

Assemble the Bowls
In a bowl, add a portion of cooked rice noodles. Top with sliced beef, fresh basil, bean sprouts, and sliced jalapeño. Ladle hot broth over the noodles and toppings.
