Marinade

Method

Preparation

  1. 1

    Prepare the Marinade

In a mixing bowl, combine olive oil, minced garlic, paprika, brown sugar, dried oregano, cayenne pepper, salt, black pepper, and lemon juice. Mix well until all ingredients are fully incorporated.

  2. 2

    Marinate the Chicken

Place the whole chicken in a large resealable plastic bag or a deep dish. Pour the marinade over the chicken, ensuring it is well-coated. Seal the bag or cover the dish and refrigerate for at least 4 hours, preferably overnight for maximum flavor.

Cooking

  1. 3

    Preheat the Grill

Prepare your grill for indirect cooking by preheating it to medium heat (about 350°F/175°C). If using charcoal, arrange the coals on one side of the grill.

  2. 4

    Prepare the Chicken for Grilling

Remove the chicken from the marinade and let excess marinade drip off. Discard the leftover marinade. Truss the chicken legs with kitchen twine if desired for even cooking.

  3. 5

    Grill the Chicken

Place the chicken on the grill over the indirect heat side. Cover the grill and cook for about 1.5 - 2 hours, or until the internal temperature reaches 165°F (75°C) in the thickest part of the chicken. Turn the chicken occasionally for even cooking.

  4. 6

    Rest and Serve

Once cooked, remove the chicken from the grill and let it rest for 10-15 minutes before carving. This allows the juices to redistribute. Serve warm with your favorite sides.
