Filling Preparation

    Prepare the Spinach

    Thoroughly wash the fresh spinach under cold water. Remove any tough stems and roughly chop the leaves.

    Cook the Spinach

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped spinach and cook until wilted, about 3-5 minutes. Remove from heat and let cool.

    Sauté Onion and Garlic

    In the same skillet, add the finely chopped onion and minced garlic. Sauté for about 5 minutes until the onion is translucent.

    Combine Filling Ingredients

    In a large bowl, combine the wilted spinach, sautéed onion and garlic, crumbled feta cheese, and 1 beaten egg. Add salt, black pepper, and nutmeg. Mix well until all ingredients are incorporated.

Assembling the Spanakopita

    Prepare Phyllo Dough

    Preheat your oven to 180°C (350°F). Unroll the phyllo dough and cover it with a damp cloth to prevent it from drying out.

    Layer the Phyllo

    Brush a baking dish with melted butter. Place one sheet of phyllo in the dish and brush it with butter. Repeat this process, layering 6-8 sheets, brushing each layer with butter.

    Add Filling

    Spread the spinach and feta filling evenly over the layered phyllo.

    Top with Phyllo

    Layer more phyllo sheets over the filling, brushing each with melted butter, until you use about 6-8 sheets.

    Cut and Bake

    Using a sharp knife, cut the top layers of phyllo into squares or diamonds. Bake in the preheated oven for 30-40 minutes, or until golden brown and crispy.
