Method

Dough Preparation

  1. 1

    Activate Yeast

In a small bowl, mix warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until frothy.

  2. 2

    Make the Dough

In a large mixing bowl, combine flour and salt. Make a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.

  3. 3

    Knead the Dough

Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic.

  4. 4

    Let it Rise

Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Filling Preparation

  1. 5

    Prepare Filling

In a mixing bowl, combine ricotta cheese, cooked spinach, mozzarella cheese, parmesan cheese, minced garlic, black pepper, and salt. Mix until well combined.

Assembly and Cooking

  1. 6

    Preheat Oven

Preheat your oven to 375°F (190°C).

  2. 7

    Roll Out Dough

Once the dough has risen, punch it down and divide it into two equal pieces. Roll out each piece on a floured surface into a rectangle.

  3. 8

    Fill and Fold

Spread the filling evenly over one rolled-out dough piece, leaving a small border. Place the second rolled-out piece over the top and press down the edges to seal.

  4. 9

    Bake

Transfer the assembled dough to a greased baking sheet. Brush the top with olive oil and cut a few slits for steam to escape. Bake for about 25-30 minutes or until golden brown.

Serving

  1. 10

    Serve

Once baked, let it cool slightly, then slice and serve warm, garnished with fresh basil leaves and a drizzle of olive oil.
