Braised Beef Short Ribs

    Prepare the Beef

    Season the beef short ribs with salt and black pepper on all sides.

    Sear the Beef

    In a large Dutch oven, heat olive oil over medium-high heat. Add the seasoned beef short ribs and sear until browned on all sides, about 3-4 minutes per side. Remove the beef and set aside.

    Sauté Vegetables

    In the same pot, add chopped onion, carrots, celery, and minced garlic. Sauté for about 5 minutes until vegetables are softened.

    Deglaze the Pot

    Pour in the red wine, scraping the bottom of the pot to release any browned bits. Bring to a simmer and reduce the wine by half.

    Add Broth and Herbs

    Add the beef broth, bay leaves, thyme, and rosemary. Stir to combine.

    Braise the Beef

    Return the seared beef short ribs to the pot, ensuring they are submerged in the liquid. Cover and simmer on low heat for 2.5 to 3 hours, or until the beef is tender and falling off the bone.

Grilled Asparagus

    Prepare the Asparagus

    Preheat the grill to medium-high heat. While the grill is heating, prepare the asparagus by trimming the woody ends.

    Season the Asparagus

    In a bowl, toss the asparagus with olive oil, salt, and black pepper until well coated.

    Grill the Asparagus

    Place the asparagus directly on the grill grates or use a grilling basket. Grill for about 5-7 minutes, turning occasionally, until tender and slightly charred.

    Finish with Lemon

    Remove the asparagus from the grill and drizzle with fresh lemon juice before serving.
