    Cook the Sausage and Mushrooms

    In a large skillet over medium heat, add the olive oil. Once hot, add the Italian sausage and cook until browned. Add the sliced mushrooms and sauté until they are tender. Remove from heat and set aside.

    Prepare the Egg Mixture

    In a large bowl, whisk together the eggs, milk, salt, and black pepper until well combined.

    Cook the Omelet

    In the same skillet used for the sausage and mushrooms, pour the egg mixture and cook over medium-low heat. Gently stir the eggs occasionally, allowing them to cook evenly.

    Add Fillings

    Once the eggs are mostly set but still slightly runny on top, add the cooked sausage, mushrooms, mozzarella, and parmesan cheese evenly over one half of the omelet.

    Fold and Finish

    Carefully fold the omelet in half over the fillings. Cook for an additional 2-3 minutes until the cheese is melted and the eggs are fully cooked. Slide the giant omelet onto a large plate.
