Prepare the Potatoes
Peel the potatoes and cut them into even-sized sticks or wedges, about 1/4 inch thick.

Preheat the Oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Dry the Potatoes
Drain the soaked potatoes and pat them dry with paper towels to remove moisture.

Fry the Potatoes (First Fry)
Carefully add a batch of potatoes to the hot oil and fry for about 4-5 minutes until they are soft but not browned. Remove them with a slotted spoon and drain on paper towels.

Fry the Potatoes (Second Fry)
Increase the oil temperature to 375°F (190°C) and fry the potatoes again in batches for an additional 2-3 minutes until they are golden brown and crispy. Drain on paper towels.

Season the Fries
While the fries are hot, sprinkle with salt, black pepper, garlic powder, and paprika. Toss to coat evenly.

Serve the fries hot with your favorite dipping sauces.
