Kettle Chips Preparation

Slice the Potatoes

Wash and scrub the Russet potatoes thoroughly. Using a mandoline slicer or a sharp knife, slice the potatoes into thin, even slices (about 1/8 inch thick).

Soak the Slices

Place the potato slices in a bowl of cold water and let them soak for at least 30 minutes. This step helps to remove excess starch and achieve crispier chips.

Dry the Potatoes

After soaking, drain the potato slices and pat them dry with paper towels to remove excess moisture.

Heat the Oil

In a large pot or deep fryer, heat vegetable oil to 350°F (175°C). Use a thermometer to check the temperature for accuracy.

Fry the Chips

Carefully add a handful of potato slices to the hot oil, being careful not to overcrowd the pot. Fry for about 3-4 minutes or until the chips are golden brown and crispy. Remove them with a slotted spoon and drain on paper towels.

Season the Chips

While the chips are still hot, sprinkle with sea salt and any additional seasonings you desire. Toss gently to evenly coat the chips.
