    Prepare the Potatoes

    Peel the Russet potatoes and grate them using a box grater or a food processor. Place the grated potatoes in a bowl and cover them with cold water to prevent browning.

    Peel and grate the onion. Add the grated onion to the bowl with the grated potatoes, mixing them together.

    Drain and Dry

    After soaking for about 10 minutes, drain the potatoes and onion mixture in a colander. Press the mixture firmly to remove as much excess water as possible. You want the mixture to be as dry as possible for crispy hash browns.

Cooking

    Heat the Oil

    In a large skillet, heat the vegetable oil over medium-high heat until shimmering but not smoking.

    Once the oil is hot, add the butter and let it melt, mixing it with the oil.
