1. Prepare the ingredients
Rinse the brown lentils under cold water and set aside. Chop the onion, carrot, and celery into small pieces. Mince the garlic cloves.
Cooking
2. Sauté the vegetables
In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery. Sauté for 5-7 minutes, or until the vegetables are softened.
3. Add garlic and spices
Stir in the minced garlic, cumin, paprika, salt, black pepper, and red chili flakes. Cook for another 2 minutes until fragrant.
4. Combine lentils and broth
Add the rinsed brown lentils, vegetable broth, canned diced tomatoes (with juice), and bay leaf to the pot. Bring the mixture to a boil.
5. Simmer the soup
Reduce the heat to low and cover the pot. Let it simmer for 25-30 minutes, or until the lentils are tender.
6. Add spinach
Stir in the fresh spinach and cook for an additional 5 minutes until the spinach is wilted.
Serving
7. Garnish and serve
Remove the bay leaf and serve the soup hot, garnished with fresh cilantro and a squeeze of lemon juice.
