Method

Prepare Carne Asada

    Marinate Carne Asada

    In a bowl, combine olive oil, garlic powder, cumin, salt, and black pepper. Add carne asada and coat well. Let it marinate for at least 30 minutes.

    Cook Carne Asada

    Heat a grill or skillet over medium-high heat. Cook the carne asada for about 4-5 minutes per side for medium-rare. Remove from heat and let it rest before slicing.

Roast Peppers & Onions

    Prep Vegetables

    Slice the bell peppers and onion into strips.

    Roast Vegetables

    Toss the sliced peppers and onions with olive oil, salt, and black pepper. Spread on a baking sheet and roast in the oven at 400°F (200°C) for 20 minutes or until tender and slightly charred.

Prepare Smoked Corn

    Cook Corn

    In a skillet over medium heat, melt butter. Add corn kernels and smoked paprika. Sauté for about 5-7 minutes until heated through and slightly caramelized. Season with salt to taste.

Make Green Chile Beer Cheese

    Combine Ingredients

    In a saucepan over medium heat, combine cream cheese, beer, green chiles, garlic powder, and shredded cheddar cheese. Stir until the cheese is melted and the mixture is smooth. Season with salt to taste.

Prepare Chimichurri

    Mix Chimichurri Ingredients

    In a bowl, combine chopped parsley, cilantro, minced garlic, red wine vinegar, olive oil, red pepper flakes, and salt. Mix well and let it sit for at least 10 minutes to allow flavors to meld.

Cook Sunny-Side-Up Eggs

    Fry Eggs

    In a skillet, melt butter over medium heat. Crack the eggs into the skillet and cook for about 2-3 minutes until the whites are set but the yolks remain runny. Season with salt to taste.

Assemble the Dish

    Plate the Hash

    On a large platter or individual plates, layer the sliced carne asada, roasted peppers and onions, smoked corn, and drizzle with green chile beer cheese. Top with sunny-side-up eggs and a generous amount of chimichurri.

    Serve

    Serve immediately while hot, garnished with extra chimichurri if desired.
