Hash Beer Cheese Preparation

    Make the Beer Cheese

    In a saucepan over medium heat, combine the beer, cheddar cheese, cream cheese, garlic powder, onion powder, salt, and black pepper. Stir continuously until the cheese melts and the mixture is smooth. Once done, set aside.

Breakfast Filling Preparation

    Prepare the Eggs and Vegetables

    In a bowl, whisk the eggs with salt and black pepper. Dice the onion and bell pepper. In a skillet over medium heat, add a little oil and sauté the onion and bell pepper until softened, about 3-4 minutes. Pour in the whisked eggs and scramble until cooked through.

    Combine with Hash Browns

    Once the eggs are scrambled, add the cooked hash browns to the skillet and mix well to combine. Remove from heat.

Pico de Gallo Preparation

    Make the Pico de Gallo

    In a bowl, combine diced tomatoes, chopped red onion, chopped cilantro, lime juice, and salt. Mix well and set aside.

Burrito Assembly

    Assemble the Burrito

    Lay a flour tortilla flat on a plate. Spoon a portion of the egg and hash brown mixture in the center, drizzle with the beer cheese, and top with pico de gallo. Fold in the edges and roll up tightly.

    Griddle the Burrito

    In a skillet, melt the butter over medium heat. Place the burrito seam-side down and cook until golden brown, about 2-3 minutes on each side.
