Preparing the Fries

Cut the Potatoes
Wash the Russet potatoes thoroughly. Cut them into thin strips, about 1/4 inch thick, to create fries.

Soak the Potatoes
Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and makes the fries crispier.

Dry the Potatoes
After soaking, drain and thoroughly dry the fries using a clean kitchen towel or paper towels.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

Carefully add a batch of dried potato strips to the hot oil. Fry until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels, then immediately sprinkle with salt.

Making the Garlic Truffle Sauce
