Preparing the Fish

Make the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold sparkling water until the batter is smooth and has a slightly thick consistency.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Ensure you have enough oil to submerge the fish pieces while frying.

Fry the Fish
Dip each fish fillet into the batter, allowing excess to drip off, then gently place them into the hot oil. Fry for about 5-7 minutes or until golden brown and crispy. Remove and drain on paper towels.

Cut the Potatoes
Peel the russet potatoes and cut them into thick strips (about 1/4 inch thick).

Soak the Potatoes
Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch, then drain and pat dry.

Fry the Fries
In a separate pot or fryer, heat the vegetable oil to 350°F (175°C). Fry the potato strips in batches for about 4-5 minutes until they are golden and crispy. Remove and drain on paper towels, immediately sprinkling with salt.

Combine Ingredients
In a small bowl, mix together the mayonnaise, dill pickles, capers, lemon juice, and fresh dill. Season with salt and black pepper to taste.
