Prepare the Onions

Caramelize the Onions
Slice the medium onion thinly. In a skillet over medium heat, add 1 tablespoon of vegetable oil. Once hot, add the sliced onion and cook, stirring occasionally, for about 15-20 minutes until the onions are soft and golden brown. Remove from heat and set aside.
Make the Eggs

Scramble the Eggs
In a bowl, whisk together 4 large eggs with a pinch of salt and pepper. In the same skillet used for the onions, add a little butter or oil if needed. Pour in the eggs and cook over low heat, gently stirring with a spatula until the eggs are soft and slightly runny. Remove from heat.

Make Crispy Hash Browns
Grate the potatoes and rinse them under cold water to remove excess starch. Drain and pat dry with a kitchen towel. In a skillet, heat vegetable oil over medium-high heat. Once hot, add the grated potatoes in an even layer. Season with salt and pepper. Cook for about 5-7 minutes on one side until crispy, then flip and cook for another 5-7 minutes until golden brown and crispy. Remove from skillet and drain on paper towels.
