Bavarian-style Pretzel

Charcuterie

Method

Bavarian-style Pretzel

  1. 1

    Activate the Yeast

In a bowl, combine warm water, sugar, and yeast. Stir gently and let it sit for about 5-10 minutes until frothy.

  2. 2

    Prepare the Dough

In a large mixing bowl, combine flour and salt. Pour in the activated yeast mixture. Mix until a dough forms.

  3. 3

    Knead the Dough

Turn the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic.

  4. 4

    Let the Dough Rise

Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

  5. 5

    Shape the Pretzels

Preheat the oven to 450°F (230°C). Punch down the risen dough and divide it into 8 equal pieces. Roll each piece into a long rope and shape it into a pretzel.

  6. 6

    Prepare the Baking Soda Bath

In a large pot, bring 10 cups of water to a boil and add baking soda. Carefully place each pretzel in the bath for about 30 seconds.

  7. 7

    Bake the Pretzels

Transfer the pretzels to a baking sheet lined with parchment paper. Brush with beaten egg and sprinkle with coarse sea salt. Bake for 12-15 minutes or until golden brown.

Charcuterie Assembly

  1. 8

    Cook the Beer Bratwurst

Grill or pan-fry the beer bratwurst according to package instructions until fully cooked and browned.

  2. 9

    Prepare the Charcuterie Board

On a large serving board, elegantly arrange the sliced prosciutto di parma, sopressata, cooked bratwurst, and marinated olives.

  3. 10

    Add Condiments

Serve with mustard and pickles on the side for dipping. Enjoy your Brewer's Board!
