Dough

Baking Soda Bath

Method

Dough Preparation

  1. 1

    Activate Yeast

In a small bowl, dissolve the sugar in warm water and sprinkle the yeast on top. Let it sit for about 5-10 minutes until it becomes foamy.

  2. 2

    Mix Dough

In a large mixing bowl, combine the flour and salt. Add the melted butter and the foamy yeast mixture. Mix until a dough forms.

  3. 3

    Knead the Dough

Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

Shaping and Boiling

  1. 4

    Shape Pretzels

Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a long rope (about 24 inches) and shape it into a pretzel form.

  2. 5

    Prepare Baking Soda Bath

In a large pot, bring 10 cups of water to a boil and add the baking soda slowly (it will fizz).

  3. 6

    Boil Pretzels

Carefully place the pretzels into the boiling water, one or two at a time, and boil for about 30 seconds on each side. Remove with a slotted spoon and place on a parchment-lined baking sheet.

Baking

  1. 7

    Preheat Oven

Preheat your oven to 450°F (230°C).

  2. 8

    Add Toppings

Brush the boiled pretzels with melted butter and sprinkle with coarse sea salt.

  3. 9

    Bake Pretzels

Bake the pretzels in the preheated oven for 12-15 minutes or until golden brown. Remove and let cool slightly before serving.
