Prepare the Filling
In a large mixing bowl, combine ground pork, chopped shiitake mushrooms, green onions, minced garlic, grated ginger, soy sauce, sesame oil, salt, and pepper. Mix well until all ingredients are evenly incorporated.

Assemble the Potstickers
Take a wonton wrapper and place a teaspoon of filling in the center. Moisten the edges with water, fold the wrapper in half to create a half-moon shape, and press the edges to seal. Repeat until all filling is used.

Cook the Potstickers
In a large skillet, heat a tablespoon of oil over medium-high heat. Place potstickers in a single layer and cook for about 2-3 minutes until the bottom is golden brown. Add a splash of water (about 1/4 cup), cover, and steam for another 4-5 minutes until cooked through. Remove the lid and allow any remaining water to evaporate.

Serve hot with sesame Oriental sauce on the side for dipping.
