Cook the Pasta
Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve about 1 cup of pasta cooking water, then drain the pasta.
Making the Sauce

Cook the Pancetta
In a large skillet over medium heat, add the pancetta. Cook until crispy and golden, about 5-7 minutes. Remove from heat and set aside.

Prepare the Egg Mixture
In a mixing bowl, whisk together the eggs, grated Parmesan cheese, and freshly ground black pepper until well combined. Set aside.
Combining Ingredients

Combine Pasta and Sauce
Add the drained spaghetti to the skillet with the pancetta. Toss to combine and return to low heat. Quickly pour the egg and cheese mixture over the pasta, tossing constantly to create a creamy sauce. If the sauce is too thick, add a little reserved pasta cooking water to adjust the consistency.

Season and Serve
Taste and season with additional salt and black pepper if needed. Serve immediately, garnished with extra Parmesan cheese if desired.
