Calamari Preparation

Prepare the Squid
Rinse the cleaned squid rings under cold water and pat dry with paper towels.

Make the Breading Mixture
In a bowl, combine all-purpose flour, cornstarch, salt, black pepper, and garlic powder.

Prepare Breadcrumbs
Place the breadcrumbs in a third bowl.

Coat the Squid
Dredge each squid ring in the flour mixture, dip in the beaten eggs, and then coat in breadcrumbs. Set aside on a plate.
Frying Calamari

Heat Oil
In a large pot or deep fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Squid
Carefully add a few squid rings to the hot oil (do not overcrowd) and fry for 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Continue frying the remaining squid rings in batches until all are cooked.

Add Tomatoes and Spices
Stir in the canned crushed tomatoes, oregano, basil, salt, black pepper, red pepper flakes, and sugar. Bring to a simmer.

Simmer Sauce
Reduce heat and let the sauce simmer for about 15-20 minutes, stirring occasionally.
Serving

Plate the Dish
Arrange the fried calamari on a serving platter and serve hot with marinara sauce on the side for dipping.
