    In a bowl, combine the fresh mozzarella cheese, ricotta cheese, chopped fresh basil, salt, and black pepper. Mix until well combined.

    Stuff the Flowers

    Gently open each zucchini flower and remove the stamen from the center. Fill each flower with the cheese mixture, being careful not to overfill.

    Prepare the Batter

    In a mixing bowl, whisk together the all-purpose flour, cornstarch, sparkling water, and salt until smooth. Let it rest for about 10 minutes.

Fry the Zucchini Flowers

    Heat the Oil

    In a large pot or deep skillet, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F).

    Fry the Stuffed Flowers

    Dip each stuffed zucchini flower into the batter, allowing any excess to drip off. Carefully place them in the hot oil and fry for about 3-4 minutes, or until golden brown. Fry in batches to avoid overcrowding.
