Preparation of Filling

1. Make the Filling

In a mixing bowl, combine the breadcrumbs, grated Parmesan cheese, minced garlic, chopped parsley, salt, black pepper, and the egg. Mix until well combined.

Preparing the Meat

2. Prepare the Flank Steak

Lay the flank steak flat on a clean surface. Use a meat mallet to pound the steak to about 1/2 inch thickness, ensuring it is even throughout.

3. Spread the Filling

Evenly spread the filling mixture over the flank steak, leaving a small border around the edges.

4. Roll the Steak

Starting from one end, tightly roll the flank steak over the filling to create a log shape. Secure the roll with kitchen twine at regular intervals.

Cooking the Braciole

5. Sear the Braciole

In a large skillet, heat olive oil over medium-high heat. Sear the rolled braciole on all sides until browned, about 3-4 minutes per side.

6. Prepare the Sauce

In the same skillet, add chopped onion and sauté until translucent. Add crushed tomatoes, dried oregano, salt, black pepper, sugar, and basil. Stir well.

7. Simmer

Return the braciole to the skillet, cover, and let it simmer on low heat for about 1.5 to 2 hours, or until the meat is tender.

Serving

8. Slice and Serve

Once cooked, remove the braciole from the skillet and let it rest for a few minutes. Slice into thick pieces and serve with the sauce poured over.
