Cooking the Pasta

Boil the Water
Fill a large pot with water and add a generous amount of salt. Bring the water to a rolling boil.

Cook the Spaghetti
Add the spaghetti to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.

Reserve Pasta Water
Before draining, reserve about 1 cup of the pasta cooking water, then drain the spaghetti.
Preparing the Sauce

Cook the Pancetta
In a large skillet over medium heat, add the pancetta. Cook until crispy, about 5-7 minutes. Remove from heat.

Mix Eggs and Cheese
In a mixing bowl, whisk together the eggs and grated Parmesan cheese until well combined. Season with black pepper.
Combining the Ingredients

Combine Pasta and Pancetta
Add the drained spaghetti to the skillet with the pancetta. Toss to combine over low heat.

Add Egg Mixture
Slowly pour the egg and cheese mixture over the pasta, stirring quickly to coat the spaghetti without scrambling the eggs. Add reserved pasta water a little at a time until you reach the desired creamy consistency.
Serving

Plate the Carbonara
Serve the spaghetti carbonara immediately, garnished with chopped fresh parsley and additional Parmesan cheese if desired.
