    Prepare the Pork Tenderloin

    Preheat your oven to 400°F (200°C). Trim any excess fat from the pork tenderloin and season it generously with salt and black pepper.

    Sear the Pork

    In a large skillet, heat olive oil over medium-high heat. Add the pork tenderloin and sear on all sides until golden brown, about 3-4 minutes per side.

    Cook the Peppers and Onions

    Remove the pork from the skillet and set aside. In the same skillet, add the sliced red bell pepper, yellow onion, and hot cherry peppers. Sauté for about 5-7 minutes until they are softened.

    Finish Cooking the Pork

    Return the pork tenderloin to the skillet with the vegetables. Transfer the skillet to the preheated oven and roast for about 15-20 minutes, or until the pork reaches an internal temperature of 145°F (63°C).

    Once cooked, let the pork rest for about 5 minutes before slicing. Serve the sliced pork on a platter with the sautéed peppers and onions.

    Boil the Potatoes

    In a large pot, add the cubed potatoes and cover with cold water. Bring to a boil and cook until tender, about 15-20 minutes. Drain and return to the pot.

    In a skillet over medium heat, cook the diced pancetta until crispy, about 5-7 minutes. Add the minced garlic and cook for an additional minute until fragrant.

    Add the crispy pancetta and garlic mixture to the drained potatoes. Add butter, milk, salt, and black pepper. Mash until smooth and creamy.
