Panna Cotta Base

Prepare the Gelatin
In a small bowl, sprinkle the gelatin powder over 3 tablespoons of cold water. Let it sit for about 5-10 minutes until it blooms (absorbs the water and expands).

Heat the Cream Mixture
In a medium saucepan, combine the heavy cream, whole milk, and granulated sugar. Heat over medium heat, stirring continuously until the sugar has completely dissolved and the mixture is just about to simmer (do not let it boil).

Add Gelatin and Vanilla
Remove the saucepan from heat. Stir in the bloomed gelatin until fully dissolved. Then add the vanilla extract and mix well.

Pour into Molds
Pour the mixture into individual ramekins or molds. Let them cool to room temperature, then cover with plastic wrap and refrigerate for at least 4 hours, or until set.
Berry Sauce

Prepare the Berries
In a saucepan over medium heat, add the mixed berries and granulated sugar. Cook for about 5-7 minutes until the berries start to break down and release their juices.

Finish the Sauce
Stir in the lemon juice and continue to cook for another 2-3 minutes until the sauce thickens slightly. Remove from heat and let it cool.

Serve
Once the panna cotta has set, carefully unmold them onto serving plates. Drizzle the berry sauce over the panna cotta before serving.
