Cooking the Pasta

Boil the Pasta
In a large pot, bring salted water to a boil. Add the paccheri pasta and cook according to package instructions until al dente, usually around 12-14 minutes. Stir occasionally to prevent sticking.

Drain the Pasta
Once cooked, reserve 1 cup of pasta water and drain the rest. Set aside the pasta while you prepare the sauce.
Making the Sauce

Prepare the Zucchini
While the pasta is cooking, wash and slice the green zucchini into thin rounds.

Sauté the Garlic and Zucchini
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Add the sliced zucchini and cook for about 5-7 minutes until tender.

Add Shrimp
Add the peeled and deveined shrimp to the skillet. Cook for 3-5 minutes until the shrimp are pink and cooked through.

Make it Creamy
Pour in the heavy cream, and season with salt and black pepper. Stir well to combine and cook for an additional 2-3 minutes until slightly thickened.

Combine with Pasta
Add the cooked paccheri to the skillet, mixing gently to coat the pasta in the sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

Finish the Dish
Stir in the grated Parmesan cheese and chopped fresh basil. Mix until the cheese is melted and the dish is well combined.
Serving

Plate the Paccheri
Serve the paccheri hot, garnished with additional Parmesan cheese and basil if desired.
