Preparing the Ingredients

1. Prepare the Broccoli Rabe

Trim the ends of the broccoli rabe and cut it into 2-inch pieces. Blanch it in boiling salted water for 2-3 minutes until tender, then drain and set aside.

2. Mince the Garlic

Peel and finely mince the garlic cloves. Set aside.

Cooking the Sausage and Pasta

3. Cook the Sausage

In a large skillet, heat the olive oil over medium heat. Add the Italian sausage, breaking it apart with a spoon. Cook until browned and cooked through, about 5-7 minutes.

4. Add Garlic and Red Pepper Flakes

Add the minced garlic and red pepper flakes to the sausage in the skillet. Sauté for another 1-2 minutes until fragrant.

5. Cook the Orecchiette

Meanwhile, in a separate pot, bring salted water to a boil. Add the orecchiette and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

6. Combine Ingredients

Add the blanched broccoli rabe to the skillet with the sausage and garlic. Stir together, then add the cooked orecchiette. Toss to combine, adding reserved pasta water a little at a time to create a sauce.

7. Season and Serve

Season the dish with salt and black pepper to taste. Remove from heat, then stir in the grated Parmesan cheese and lemon zest. Serve hot, garnished with additional Parmesan if desired.
