Cooking the Pasta

    Boil Linguine

    In a large pot, bring salted water to a boil. Add linguine and cook according to package instructions until al dente, usually about 8-10 minutes. Once cooked, reserve 1 cup of pasta water, drain the rest, and set aside.

Making the Pesto

    Prepare the Pesto

    In a food processor, combine fresh basil leaves, pine nuts, garlic cloves, grated Parmesan cheese, olive oil, and salt. Blend until smooth. If the mixture is too thick, add a little reserved pasta water to reach desired consistency.

Cooking the Seafood

    Sear Scallops

    In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Season scallops with salt and black pepper. Add scallops to the skillet and sear for about 2-3 minutes on each side until golden brown and cooked through. Remove from skillet and set aside.

    Cook Shrimp

    In the same skillet, add minced garlic and sauté for 30 seconds until fragrant. Add shrimp and cook for 2-3 minutes until pink and opaque. Season with salt and black pepper. Remove from heat.

Combining Ingredients

    Mix Pasta with Pesto

    In the large pot with the drained linguine, add the pesto and toss to combine. If the pasta seems dry, gradually add reserved pasta water until desired creaminess is achieved.

    Add Seafood

    Gently fold in the seared scallops and cooked shrimp into the pasta. Mix thoroughly to combine all ingredients evenly.

Serving
