Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans with butter or cooking spray.

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.

In a separate bowl, cream together the softened butter and the granulated sugar until light and fluffy.

Beat in the eggs one at a time, mixing well after each addition. Then, stir in the milk, lemon zest, vanilla extract, and lemon juice until smooth.

In a medium bowl, combine the mascarpone cheese and heavy cream. Whip together until soft peaks form.

Gradually add the powdered sugar, lemon zest, and lemon juice, continuing to beat until the frosting is smooth and well combined.

Frost the Cake
Once the cakes are completely cool, place one layer on a serving plate. Spread a generous amount of mascarpone frosting on top, then top with the second layer.

Spread the remaining frosting on the top and sides of the cake, smoothing it out with a spatula.
