Method

Preparing Lamb Chops

    Marinate the Lamb

    In a bowl, combine olive oil, minced garlic, chopped rosemary, salt, and black pepper. Rub this mixture over the lamb chops and let them marinate for at least 30 minutes.

    Grill the Lamb

    Preheat your grill to medium-high heat. Grill the marinated lamb chops for about 4-5 minutes on each side for medium-rare, or until they reach your desired doneness. Remove from the grill and let them rest.

Making the Brown Mushroom Demi Glaze

    Sauté the Aromatics

    In a medium saucepan, melt butter over medium heat. Add chopped shallots and cook until translucent. Add sliced brown mushrooms and thyme; sauté until mushrooms are browned.

    Deglaze and Reduce

    Pour in red wine, scraping the bottom of the pan to release any browned bits. Let the mixture simmer until reduced by half.

    Finish the Glaze

    Add the beef stock and continue simmering until the sauce thickens slightly. Strain if desired, and keep warm until serving.

Preparing Potato Croquettes

    Cook the Potatoes

    Boil potatoes in salted water until tender. Drain and mash them in a bowl.

    Form the Croquettes

    Add egg, salt, and black pepper to the mashed potatoes. Mix well and form into small cylindrical shapes. Roll each croquette in breadcrumbs.

Cooking Broccoli Rabe

    Boil a pot of salted water and blanch the broccoli rabe for 2-3 minutes. Drain and set aside.

    In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Add the blanched broccoli rabe, salt, and red pepper flakes. Cook for an additional 3-4 minutes.
