Crispy Mashed Potato Croquettes

Method

Preparing the Steak

    Preheat the Grill

    Preheat your grill to high heat, around 450°F (232°C).

    Season the Steak

    Rub the rib eye steak with olive oil, salt, and black pepper on both sides.

    Grill the Steak

    Place the steak on the grill and cook for about 4-5 minutes on each side for medium-rare doneness, or until your desired doneness is reached.

    Rest the Steak

    Remove the steak from the grill and let it rest for 5-10 minutes before slicing.

Making the Creamy Peppercorn Sauce

    Melt the Butter

    In a saucepan over medium heat, melt the butter. Add the finely chopped shallots and cook until translucent.

    Pour in the beef broth and bring it to a simmer. Let it reduce by half.

    Lower the heat and stir in the heavy cream and crushed black peppercorns. Cook until the sauce thickens.

Preparing the Crispy Mashed Potato Croquettes

    In a bowl, combine the mashed potatoes, egg, salt, and black pepper. Mix until well combined.
