Preparation of Gelato Base

    Combine Milk and Cream

    In a medium saucepan, combine the whole milk and heavy cream. Heat over medium heat until just simmering, stirring occasionally.

    Whisk Egg Yolks and Sugar

    In a separate bowl, whisk together the egg yolks and granulated sugar until the mixture becomes pale and creamy.

    Temper the Egg Mixture

    Slowly pour about 1/2 cup of the hot milk mixture into the egg yolk mixture, whisking constantly to temper the eggs. Gradually add the tempered egg mixture back into the saucepan with the remaining milk mixture.

    Continue to cook the mixture over medium heat, stirring constantly, until it thickens and coats the back of a spoon (about 5-7 minutes). Do not let it boil.

    Remove from heat and stir in the vanilla extract. Allow the mixture to cool at room temperature.

    Once cooled, cover the mixture and refrigerate for at least 4 hours or overnight for best results.

    For chocolate gelato, stir in the chocolate syrup. For fruit gelato, mix in the fruit puree. For coffee gelato, stir in the brewed coffee, and for mint gelato, add the mint extract.
