Fried Mozzarella

Prepare the Mozzarella
Slice the fresh mozzarella into thick slices (about 1/2 inch each).

Bread the Mozzarella
Coat each mozzarella slice first in flour, then dip into the beaten eggs, and finally coat with bread crumbs. Set aside on a plate.

Heat Oil
In a large skillet, heat the vegetable oil over medium-high heat until shimmering.

Fry the Mozzarella
Carefully place the breaded mozzarella slices into the hot oil and fry for about 2-3 minutes on each side, or until golden brown. Remove and place on paper towels to drain excess oil.

Add Tomatoes and Seasoning
Stir in the canned crushed tomatoes, oregano, basil, salt, pepper, and sugar. Bring to a simmer.

Simmer Sauce
Reduce heat and let it simmer for about 15-20 minutes, stirring occasionally.
Assembly

Plate the Dish
On a serving plate, add a generous amount of red sauce as a base.

Top with Mozzarella
Place the fried mozzarella slices on top of the sauce.

Garnish
Sprinkle with grated Parmesan cheese and chopped fresh basil before serving.
