Method

Cooking Pasta

    Boil Water

    In a large pot, bring water to a rolling boil. Add 1 tablespoon of salt to the water.

    Cook Pasta

    Add the fettuccine pasta to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.

    Reserve Pasta Water

    Before draining the pasta, reserve about 1 cup of the pasta cooking water.

    Drain Pasta

    Drain the fettuccine in a colander and set aside.

Making Cacio E Pepe Sauce

    Combine Ingredients

    In the same pot used for cooking the pasta, add the drained pasta back in along with the olive oil, grated Romano cheese, and freshly ground black pepper.

    Mix and Add Water

    Toss the pasta with the cheese and pepper mixture, adding reserved pasta water a little at a time until you achieve a creamy consistency.

  3. 7

    Serve

    Serve immediately with extra grated Romano cheese and cracked black pepper on top.
