For the Chicken Milanese

Prepare the Chicken
Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness of about 1/2 inch using a meat mallet.

Set Up Breading Station
Set up a breading station with three shallow dishes: one with flour seasoned with salt and pepper, one with beaten eggs, and one with breadcrumbs.

Bread the Chicken
Dredge each chicken breast in flour, shaking off excess, then dip into the beaten eggs, and finally coat with breadcrumbs. Press the breadcrumbs onto the chicken to adhere well.

Fry the Chicken
In a large skillet, heat the olive oil over medium-high heat. Once hot, add the breaded chicken breasts and fry for about 4-5 minutes on each side or until golden brown and cooked through. Remove from the skillet and drain on paper towels.

Prepare the Salad
In a large bowl, combine the fresh arugula and halved cherry tomatoes. Toss gently to mix.

Assemble the Dish
Slice the fried chicken into strips and place them on top of the arugula and tomatoes. Tear the fiore di latte cheese into pieces and scatter over the salad.

Finish with Balsamic Reduction
Drizzle the balsamic reduction over the chicken and salad for added flavor. Serve immediately.
