Pasta Preparation
Cook the Tortellini
Bring a large pot of salted water to a boil. Add the cheese tortellini and cook according to the package instructions, usually about 3-5 minutes, until they are al dente. Once cooked, reserve 1 cup of the pasta water, then drain the tortellini.
Sauce Preparation
Make the Cacio e Pepe Sauce
In a large skillet over medium heat, melt the unsalted butter. Once melted, add the freshly cracked black pepper and sauté for about 1 minute to release its flavor. Remove the skillet from heat.
Add Cheese and Pasta Water
Gradually add the grated Pecorino Romano cheese and about 1/2 cup of the reserved pasta water. Toss continuously until the cheese melts and forms a creamy sauce. If the sauce is too thick, add more pasta water as needed. Season with salt to taste.
Serving
Garnish and Serve
Plate the tortellini and sprinkle with chopped fresh parsley for garnish. Serve immediately while hot.
