Cheesecake Base Preparation

Preheat the Oven
Preheat your oven to 325°F (160°C).

Prepare the Cream Cheese Mixture
In a large mixing bowl, beat the cream cheese with an electric mixer until smooth and creamy, about 2-3 minutes.

Add Sugar and Sour Cream
Add the granulated sugar and sour cream to the cream cheese and mix until well combined.

Incorporate Vanilla and Eggs
Mix in the vanilla extract, then add the eggs one at a time, mixing thoroughly after each addition until smooth.

Bake the Cheesecake
Bake in the preheated oven for 30-35 minutes, or until the edges are set but the center remains slightly jiggly.

Cool the Cheesecake
Remove from the oven and let the cheesecake cool to room temperature. Then refrigerate for at least 4 hours, or overnight.
Caramelized Sugar Topping Preparation

Prepare the Sugar
Once the cheesecake is chilled, sprinkle a thin layer of granulated sugar evenly over the top of each cheesecake.

Caramelize the Sugar
Using a kitchen torch, carefully caramelize the sugar until it melts and forms a golden crust. If you don't have a kitchen torch, you can place the ramekins under a broiler for 1-2 minutes, watching closely to avoid burning.

Let it Cool
Allow the caramelized sugar to cool for a few minutes until it hardens.
