Preparation of Beef Braciola

    Prepare the Beef

    Lay the beef flank steak flat on a cutting board. Use a meat mallet to gently pound it to an even thickness of about 1/2 inch.

    Season and Fill

    Season the beef with salt and black pepper. In a bowl, combine the chopped parsley, minced garlic, and grated Romano cheese. Spread this mixture evenly over the surface of the beef.

    Roll the Beef

    Starting from one end, carefully roll the beef tightly into a cylinder. Secure the roll with kitchen twine or toothpicks in several places to hold it together.

Cooking the Ragù Sauce

    Sauté the Vegetables

    In a large pot, heat the olive oil over medium heat. Add the chopped onion, diced carrot, and diced celery. Sauté until the vegetables are soft, about 5-7 minutes.

    Add the Tomatoes and Wine

    Stir in the canned crushed tomatoes and red wine. Bring the mixture to a simmer.

    Season the Sauce

    Add the bay leaf, dried oregano, and sugar to the sauce. Stir well to combine.

Simmering the Beef Braciola

    Brown the Beef

    In a separate skillet, heat a little olive oil over medium-high heat. Add the beef braciola and brown on all sides, about 2-3 minutes per side.

    Combine with Ragù

    Carefully transfer the browned beef braciola into the pot with the ragù sauce. Cover the pot and reduce the heat to low.

    Slow Cook

    Let the beef simmer in the sauce for about 1.5 to 2 hours, or until the beef is tender and flavorful. Check occasionally and stir the sauce if needed.

    Once cooked, remove the braciola from the sauce, slice it into rounds, and serve with the ragù sauce over pasta or polenta.
