Prepare Rice Mixture

    Cook Arborio Rice

    In a medium saucepan, combine Arborio rice, water, and vegetable broth. Bring to a boil, then reduce heat to low and cover. Cook for approximately 18-20 minutes or until the rice is creamy and tender. Remove from heat and let it cool.

    Mix Ingredients

    Once the rice has cooled, transfer it to a large mixing bowl. Add grated Parmesan cheese, cubed mozzarella, beaten egg, salt, and black pepper. Mix until well combined.

Form Arancini

    Shape the Balls

    With damp hands, take a portion of the rice mixture and form it into a ball about the size of a golf ball. Ensure that the mozzarella is centered within each ball. Repeat until all mixture is used.

Breading Process

    Prepare Breading Station

    Set up a breading station with 3 shallow bowls: one with flour, one with beaten eggs (2), and one with breadcrumbs mixed with 0.5 tsp of salt.

    Roll each rice ball in the flour, dip in the beaten eggs, and then coat with breadcrumbs. Make sure each ball is fully covered.

Frying

    In a large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small piece of bread; if it sizzles, the oil is ready.

    Carefully add a few arancini balls to the hot oil, making sure not to overcrowd the pot. Fry for about 3-4 minutes, or until golden brown. Use a slotted spoon to transfer them to a paper towel-lined plate to drain excess oil.
