Cook Arborio Rice
In a medium saucepan, combine Arborio rice, water, and vegetable broth. Bring to a boil, then reduce heat to low and cover. Cook for approximately 18-20 minutes or until the rice is creamy and tender. Remove from heat and let it cool.

Once the rice has cooled, transfer it to a large mixing bowl. Add grated Parmesan cheese, cubed mozzarella, beaten egg, salt, and black pepper. Mix until well combined.

With damp hands, take a portion of the rice mixture and form it into a ball about the size of a golf ball. Ensure that the mozzarella is centered within each ball. Repeat until all mixture is used.
