Steak

Gorgonzola and Mushroom Creamy Cognac Sauce

Garlic Mashed Potatoes

Method

Preparing the Steak

  1. 1

    Season the Steak

Rub the New York steak with olive oil, salt, and black pepper on both sides.

  2. 2

    Grill the Steak

Preheat the grill to high heat. Grill the steak for about 5-7 minutes on each side for medium-rare, adjusting time as needed for desired doneness.

  3. 3

    Rest the Steak

Remove the steak from the grill, cover it loosely with foil, and let it rest for 5 minutes.

Making the Gorgonzola and Mushroom Sauce

  1. 4

    Sauté Mushrooms and Garlic

In a skillet, melt 2 tablespoons of butter over medium heat. Add sliced mushrooms and minced garlic, and sauté until the mushrooms are browned and tender, about 5-7 minutes.

  2. 5

    Add Cognac

Carefully add the cognac to the skillet and allow it to reduce for about 2-3 minutes.

  3. 6

    Stir in Cream and Cheese

Pour in the heavy cream and bring to a gentle simmer. Add the gorgonzola cheese and stir until melted and incorporated. Season with salt and black pepper to taste.

Preparing the Garlic Mashed Potatoes

  1. 7

    Boil the Potatoes

Peel and cut the potatoes into chunks. Place them in a pot of salted water and bring to a boil. Cook until tender, about 15-20 minutes.

  2. 8

    Sauté Garlic

While the potatoes are boiling, in a small saucepan, melt 4 tablespoons of butter and sauté the minced garlic until fragrant, about 1-2 minutes.

  3. 9

    Mash the Potatoes

Drain the potatoes and return them to the pot. Add the sautéed garlic with butter, heavy cream, salt, and black pepper. Mash until smooth and creamy.
