Marinated Tomatoes

    Prepare and marinate tomatoes

    Place the tomato wedges (or halved cherry tomatoes) in a bowl. Add 3 tablespoons extra-virgin olive oil, 1 teaspoon red wine vinegar, thinly sliced garlic clove, 1 teaspoon salt, 1 teaspoon freshly ground black pepper and 1/4 teaspoon crushed red pepper flakes if using. Toss gently to coat. Let marinate at room temperature for 20–30 minutes (or refrigerate up to 2 hours) to develop flavor. Stir once halfway through.

Homemade Croutons

    Make croutons

    Preheat oven to 375°F (190°C). Spread bread cubes on a baking sheet. In a small bowl, whisk 2 tablespoons olive oil with 1/2 teaspoon garlic powder, 1/2 teaspoon kosher salt and 1/4 teaspoon black pepper. Drizzle over bread and toss to coat evenly. Spread bread in a single layer and bake 10–14 minutes, stirring once, until golden and crisp. Remove and cool on the pan.

Apple Vinegar Dressing

    Whisk dressing

    In a small bowl or jar combine 3 tablespoons apple cider vinegar, 1 teaspoon Dijon mustard, 1 teaspoon honey, and 1 tablespoon minced shallot. Whisk while slowly streaming in 6 tablespoons extra-virgin olive oil until emulsified. Season with 3/4 teaspoon salt and 1/2 teaspoon freshly ground black pepper. Taste and adjust sweetness or acidity to preference.

Salad Assembly

    Prepare greens and cucumber

    Wash and dry baby romaine hearts thoroughly. Tear or quarter into bite-size pieces to measure about 6 cups. Peel the cucumber in alternating strips (optional) and slice on the bias into 1/4" pieces to yield about 1 cup. Place greens in a large salad bowl. Add sliced cucumber.

    Combine salad

    Add marinated tomatoes (with a small spoonful of their marinade if desired for extra flavor) to the bowl with greens and cucumber. Sprinkle torn basil and chopped parsley over the salad. Add cooled homemade croutons.

    Dress and finish

    Drizzle the apple vinegar dressing over the salad — start with about 3 tablespoons and toss gently to coat. Add more dressing to taste, up to the remaining amount. Finish with shaved parmesan if using. Season with an extra pinch of salt and freshly ground pepper if needed and serve immediately so croutons stay crisp.
