    Prepare the Filling

    In a large bowl, combine the rice, diced tomatoes, chopped onion, parsley, 2 tablespoons of olive oil, salt, black pepper, and dried mint. Mix well and set aside.

    Prepare the Grape Leaves

    If using jarred grape leaves, rinse them under cold water to remove excess brine. Lay the leaves on a clean surface, vein side up.

    Stuff the Leaves

    Place about 1 tablespoon of the rice filling at the base of each grape leaf. Fold the sides over the filling and roll tightly from the base to the tip. Repeat with remaining leaves and filling.

    Cook the Stuffed Grape Leaves

    In a large pot, heat the remaining 2 tablespoons of olive oil over medium heat. Arrange the stuffed grape leaves seam-side down in the pot. Pour lemon juice and water over the grape leaves. Place a plate on top to keep them submerged. Bring to a simmer, cover, and cook for about 45 minutes.

    Serve

    Once cooked, remove from heat and let them sit for 10 minutes. Serve warm or at room temperature with additional lemon wedges if desired.
