Falafel Preparation

Soak the Chickpeas
Place the dried chickpeas in a bowl and cover them with water. Let them soak overnight or for at least 8 hours.

Make the Falafel Mixture
Drain and rinse the soaked chickpeas. In a food processor, combine the chickpeas, garlic, onion, parsley, cumin, coriander, baking powder, salt, and black pepper. Pulse until the mixture is coarse but holds together when formed into a ball. If too wet, add flour gradually.

Form the Patties
Using your hands, form the mixture into small balls or patties, about the size of a golf ball.

Heat the Oil
In a deep pot or fryer, heat the vegetable oil to 350°F (175°C).

Fry the Falafels
Carefully add the falafel patties to the hot oil in batches. Fry for about 3-4 minutes on each side until golden brown. Remove and drain on paper towels.

Serve
Place the falafels on a bed of lettuce, top with pickles, and serve with mini hummus on the side.
