    Activate the Yeast

    In a small bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until frothy.

    Mix the Dough

    In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and add the yeast mixture and olive oil. Mix until a rough dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic.

    First Rise

    Place the kneaded dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

    Shape the Pitas

    Punch down the dough and divide it into 8 equal pieces. Roll each piece into a ball and then flatten it into a disc about 1/4 inch thick.

    Second Rise

    Cover the discs with a cloth and let them rest for about 30 minutes.

    Cook the Pitas

    Preheat the oven to 475°F (245°C) and place a baking stone or a baking sheet inside. Once hot, place the pita discs on the stone/sheet and bake for 3-5 minutes until puffed and lightly browned.

    Cool and Serve

    Remove the pitas from the oven and let them cool on a wire rack. Serve warm or at room temperature.
