Roast the Eggplant
Preheat your oven to 400°F (200°C). Slice the eggplant in half lengthwise and score the flesh with a knife. Drizzle with olive oil and sprinkle with salt. Place the eggplant halves cut-side down on a baking sheet and roast for 30-40 minutes, or until the flesh is very soft.

Prepare the Mixture
Once the eggplant is cool enough to handle, scoop out the flesh and place it in a food processor. Add tahini, lemon juice, garlic, ground cumin, paprika, salt, and water. Blend until smooth and creamy.

Adjust Seasoning
Taste the mixture and adjust the seasoning, adding more salt or lemon juice as desired.

Serve
Transfer the Baba Ghannouj to a serving bowl, drizzle with olive oil, and garnish with chopped fresh parsley. Serve with pita bread or vegetable sticks.
