    Prepare the Beans

    Soak the dried chickpeas and fava beans in water overnight. Drain and rinse before using.

    Make the Falafel Mixture

    In a food processor, combine the soaked chickpeas, fava beans, parsley, cilantro, onion, garlic, cumin, coriander, baking powder, salt, and black pepper. Pulse until the mixture is coarsely blended but not pureed.

    Form the Falafel Balls

    Transfer the mixture to a bowl and add flour. Mix until combined. Using your hands, form small balls (about 1.5 inches in diameter) with the mixture.

    Heat the Oil

    In a deep frying pan, heat the oil to 350°F (175°C).

    Fry the Falafel

    Carefully drop the falafel balls into the hot oil, frying in batches to avoid overcrowding. Fry until golden brown and crispy, about 4-5 minutes per batch.

    Drain and Serve

    Remove the falafel from the oil and drain on paper towels. Serve hot with tahini sauce or in pita bread with salad.
