Lightly brush or spray the exposed tops of the tots with the reserved tablespoon of neutral oil (or toss quickly with oil in a bowl). Sprinkle the kosher salt, freshly ground black pepper, and smoked paprika evenly over the tots. Bake for 18–25 minutes, turning once halfway through, until golden-brown and crisp. Cooking time depends on tot size and oven; start checking at 15 minutes.

For extra crispness, broil on high for 1–2 minutes at the end—watch closely so they don't burn. Remove from oven and let rest 1–2 minutes on the sheet to firm up.
Comeback Sauce

Combine base ingredients
In a medium bowl, whisk together 1/2 cup mayonnaise, 2 tablespoons ketchup, and 1 tablespoon Creole or Dijon mustard until smooth.

Stir in 1 teaspoon Worcestershire sauce, 1 teaspoon apple cider vinegar, 1 teaspoon hot sauce, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, 1/2 teaspoon smoked paprika, and 1/4 teaspoon cayenne pepper. Whisk to combine.

Adjust texture and seasoning
If the sauce is too thick for dipping, whisk in up to 1 teaspoon hot water, a little at a time, until desired consistency is reached. Taste and adjust salt (add 1/4 teaspoon fine sea salt if needed) and brightness (add 1/2 teaspoon lemon juice if you want more tang).
