Method

Prepare simple syrup (if using granulated sugar)

    Make simple syrup

    Combine 1 cup granulated sugar and 1 cup water in a small saucepan. Heat over medium, stirring until sugar dissolves and liquid is clear. Remove from heat and let cool to room temperature (about 15 minutes).

Make Agua Fresca

    Blend fruit

    Place 4 cups of your chosen fresh fruit (see variations) in a blender with 2 cups cold water. Blend on high until very smooth, about 30–60 seconds. For hibiscus variation, start with 2 cups strong brewed hibiscus tea instead of fruit and water combo; for cucumber, add a squeeze of lime while blending.

    Pour the blended mixture through a fine-mesh strainer or cheesecloth into a pitcher, pressing on solids with a spatula to extract as much liquid as possible. Discard pulp or save for smoothies/baking.

    Adjust sweetness and dilute

    Add the remaining 4 cups cold water to the strained juice. Stir in 1 cup prepared simple syrup (adjust to taste) and 2 tablespoons fresh lime juice. Taste and add more syrup (up to 1/2 cup more) or water if the flavor is too strong.

    Chill

    Refrigerate the pitcher for at least 30 minutes to chill and allow flavors to meld. If you need it faster, add 2–3 cups of ice to the pitcher and stir until chilled.

    Serve

    Fill glasses with ice cubes. Pour agua fresca over ice. Garnish with lime slices and a sprig of mint if desired. Serve immediately.

Notes and substitutions

    For lower sugar: replace some or all simple syrup with honey or agave (start with 3 tbs), or use a non-caloric sweetener to taste. For a lighter flavor, increase water to 8 cups total. For fizzy version: substitute 2 cups of cold sparkling water for 2 cups cold still water just before serving. Hibiscus option: brew 2 cups water with 2 tbs dried hibiscus, steep 10 minutes, strain, chill and use as part of the liquid base; sweeten to taste.
