Muddle the mint
Place the fresh mint leaves and simple syrup (or agave) into a sturdy mixing glass or pitcher. Using a muddler or the back of a wooden spoon, gently press the mint leaves 6–8 times to release their aromatic oils. Avoid shredding the leaves—just press firmly until fragrant.

Add lime juice
Pour in the fresh lime juice. Stir the mint and lime mixture for about 10–15 seconds to combine flavors and dissolve the syrup slightly into the juice.

Combine with sparkling water
Add the chilled sparkling water to the pitcher. Stir gently 4–6 times to incorporate without flattening the carbonation. Taste and adjust sweetness: add up to 1 additional tablespoon simple syrup if you prefer sweeter.

Prepare serving vessel
If using chilled cans or bottles, ensure they are cold. Fill serving glasses or the chilled container with ice cubes or crushed ice as desired. Pour the mint-lime sparkling water over the ice, straining slightly if you prefer fewer mint bits.

Add a lime wheel or wedge to each glass and tuck a small mint sprig into the drink for aroma. Serve immediately while effervescent.
