Prepare cheese and heat pan
Shred the Tillamook cheddar if not pre-shredded and set near your cooking area. Heat a large nonstick or cast-iron skillet over medium-low heat for about 1–2 minutes; the lower temperature helps melt the cheese without burning the tortilla.

Butter the tortilla
Spread the unsalted butter evenly on one side of the 12-inch flour tortilla using the back of a spoon or a small spatula. The buttered side will be the exterior that contacts the pan (this yields a golden, crispy finish).

Fold and crisp
Using a spatula, carefully fold the tortilla in half over the cheese to form a half-moon. Press gently with the spatula and cook another 1–2 minutes per side (flip once) over medium-low heat until the tortilla is golden brown, crisp, and the cheese is fully melted. Total skillet time should be about 4–6 minutes depending on heat and pan.

Rest and cut
Transfer the quesadilla to a cutting board and let rest for 30–60 seconds so the melted cheese stabilizes slightly. Cut into 4 wedges with a sharp knife or pizza cutter.

Plate the quesadilla wedges and serve with 1/4 cup sour cream and 1/4 cup of your chosen salsa on the side for dipping. Garnish with chopped cilantro and lime wedges if desired. Squeeze a little lime over the wedges before eating for a bright finish.
